Today, I’m sharing my recipe for Healthy Brookies—a fudgy brownie base topped with a soft, chewy chocolate chip cookie layer. They’re made with better-for-you ingredients but still taste totally indulgent.

Perfect for a weekend treat, potluck favorite, or just when your sweet tooth calls.

Healthy Brookies Ingredients

For the Brownie Layer
1/2 cup almond butter
1/3 cup maple syrup
1/4 cup unsweetened cocoa powder
1 egg
1/2 teaspoon vanilla extract
Pinch of salt

For the Cookie Layer
1/2 cup almond flour
1/4 cup coconut oil (melted)
1/3 cup coconut sugar (or brown sugar)
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
1 egg
1/3 cup dark chocolate chips

Step 1: Preheat the Oven and Prepare the Pan
Preheat your oven to 350°F (175°C).
Line an 8×8 baking dish with parchment paper or lightly grease it with coconut oil.

Step 2: Make the Brownie Layer
In a medium bowl, mix together almond butter, maple syrup, cocoa powder, egg, vanilla, and salt.
Stir until smooth and well combined.
Spread the brownie mixture evenly into the bottom of your prepared baking dish.

Step 3: Make the Cookie Layer
In a separate bowl, mix together the almond flour, coconut oil, coconut sugar, vanilla, baking soda, and egg.
Fold in the chocolate chips.
Drop spoonfuls of the cookie dough on top of the brownie layer, then gently spread to cover most of the surface.

Step 4: Bake
Bake for 20–25 minutes or until the top is golden and the center is just set.
Allow the brookies to cool completely in the pan before slicing into bars.

Step 5: Serve and Enjoy
Cut into 12 squares and enjoy the perfect marriage of brownie + cookie—without the sugar crash!
